macOS reporting battery health as "Poor" immediately after replacement

The SMC and macOS System Information pull health data from EEPROM stored on the old battery's BMS. When a new cell lands in the same slot, the fuel gauge IC has no learned data to work from, so macOS flags the health state as unknown or poor. This is not a cell fault. Run two full discharge-to-hibernate and charge-to-100% cycles. After both cycles, the fuel gauge IC recalibrates against the new cell chemistry and macOS will report accurate health.

MacBook Pro shuts down at 20–30% charge shown on screen

This happens when the fuel gauge IC's state-of-charge map no longer matches the new cell's actual voltage curve. Under combined CPU and display load, the cell hits a voltage cliff that the uncalibrated gauge did not predict, and the SMC triggers an emergency shutdown. The percentage reading on screen is wrong — the cell still has charge but the system cannot see it accurately. Discharge fully to hibernate, then charge to 100% without interruption, and repeat once more to align the gauge to the new cell's discharge profile.

macOS says the battery is at 0% and won't read it at all after I put the new one in — what's wrong?

The SMC is reading stale EEPROM data from the old cell and has not yet initialised the new one. Hold Shift + Control + Option + Power for 10 seconds to reset the SMC, then boot normally and plug in the charger. The fuel gauge IC needs a live charge cycle to register the new cell. After one full charge to 100%, macOS will display a real percentage.

System Information shows the battery Wh rating as lower than the spec — is this cell underrated?

System Information pulls the Wh figure from the cell's EEPROM, which stores the manufacturer's rated capacity at the time of production. The actual usable energy can read slightly different until the fuel gauge IC runs calibration cycles against the new cell's chemistry. This is an EEPROM reporting difference, not a sign the cell is underspec. Run two full discharge-to-hibernate and charge-to-100% cycles and the reported Wh will stabilise.

The battery stops charging at 80% and never goes higher — is the new cell faulty?

This is almost always the macOS Optimized Battery Charging setting, not a cell fault. macOS learns your daily charging pattern and deliberately holds charge at 80% until it predicts you need a full charge. Go to System Settings → Battery → Battery Health → turn off Optimized Battery Charging. The cell will then charge to 100% on the next charge cycle.
