Why the G730 BIOS flags a new battery as poor health or unknown

This is not a fault with the replacement battery. Running one full discharge-to-hibernate cycle followed by an uninterrupted full charge gives the fuel gauge IC enough data to overwrite the stale EEPROM values and report correctly.

Laptop shuts down at 20–30% shown on the fuel gauge

This happens when the fuel gauge IC is still calibrated to the old cell's discharge curve. The displayed percentage and the actual cell voltage fall out of sync, and the BIOS triggers a protective shutdown before the gauge reaches zero.
