Why does my Galaxy S III shut off at around 25% after fitting the new battery?

The fuel gauge IC on the S III is calibrated to your old cell's discharge curve — it doesn't know the new cell yet. Under modem or screen load, the new cell's voltage drops faster than the gauge expects, and the phone cuts out before the counter reaches zero. Run one full discharge to automatic shutoff, then charge to 100% without interruption and without fast charging. After two full cycles the coulomb counter resets its baseline and the early shutoffs stop.

The battery percentage is jumping around erratically — it was at 60%, then jumped to 80%, then dropped to 45% in minutes. What's wrong?

This is the fuel gauge IC recalibrating against the new cell's actual discharge curve after years of mapping the old one. It is not a sign of a defective replacement cell. The percentage readings stabilise as the coulomb counter accumulates real charge and discharge data from the new cell. Complete two full cycles — discharge to shutoff, charge uninterrupted to 100% — and the gauge readings will settle.

The phone won't power on at all after the new battery sat in a drawer for a few months before installation — is it dead?

Li-ion cells self-discharge in storage, and if the cell dropped below approximately 2.5V the BMS entered lockout to prevent damage to the cell. The phone won't respond to the power button in this state. Connect the phone to a wall charger — not a computer USB port — and leave it for 20 to 30 minutes without pressing anything. The charge IC will trickle current into the cell until the BMS exits lockout, after which normal charging resumes and the phone will power on.
