New battery charges fine but the percentage jumps around wildly for the first few uses — what's causing that?
The fuel gauge IC calibrates its state-of-charge model against a learned discharge curve. With a new cell in place, it has no accurate curve yet and interpolates badly, which causes the percentage to skip or drop suddenly. This is normal behaviour for the first two to three cycles. Run full discharge-to-hibernate and full-charge cycles without interruption and the gauge IC will lock onto the correct voltage-to-capacity curve and stabilise.
