The battery percentage jumps around wildly for the first few days after fitting — is the cell faulty?

No — the fuel gauge IC is calibrating against the new cell's discharge curve. It still holds data from the old cell, so early readings are inaccurate until the IC maps the new voltage-to-capacity relationship. Run two full discharge-to-hibernate cycles followed by uninterrupted charges to 100%. After the second cycle, the gauge stabilises and the percentage readings become accurate.

System info shows the wrong Wh rating for this battery — it doesn't match the 48.84Wh spec — why?

The Wh value shown in Windows or Linux system tools is pulled from the EEPROM rated value on the original cell, not measured from the new one. The replacement cell's actual chemistry is 48.84Wh, but the OS may display whatever figure was last written to the system's battery ACPI table. Run one full calibration cycle — discharge to cutoff, charge to 100% — and the reported Wh figure will update to reflect the new cell's actual capacity.
