This causes apparent jumps — 80% dropping to 40% in a few shots, then stabilising. Why is my shot count lower than expected even though the battery shows fully charged?

Flash recycling, continuous autofocus, and optical stabilisation all pull current well beyond what a standard shot-count estimate assumes. The 1050mAh rating reflects total capacity under steady draw — burst shooting with flash enabled can draw peak currents that deplete the cell faster than the indicator suggests. Disable flash when shooting in daylight and switch AF to single-shot mode to bring actual shot count closer to the rated figure.

The battery percentage on my DC-5300 keeps jumping around — is the cell faulty?

It's not a faulty cell. The camera's percentage display is calibrated to an aged OEM cell's discharge curve.
