It happens most often when the fuel gauge IC has not yet calibrated against the new cell's discharge curve. Run two or three full cycles from 100% down to hibernate cutoff without interrupting the discharge. After calibration, the cutoff will track actual cell voltage correctly and the early shutdown stops. If it persists past three cycles, check that the BIOS charge threshold setting is not capping the cell below 95%.

The charge percentage jumps around wildly — it reads 60%, then suddenly 45% a few minutes later. What's happening?

The fuel gauge IC builds its state-of-charge model from the cell it originally learned on. With a new cell in place, that model is mismatched and the percentage output is unstable. We see this consistently on the first two to three cycles after any MateBook cell swap.
