The battery percentage on my 6670 City is jumping around erratically after I fitted the new MP-S-G cell — is the battery faulty?

It is not faulty. The fuel gauge IC lost its reference point when the old cell was removed, and it is now estimating charge state from incomplete data. Erratic jumps — sometimes 10% in either direction — are the counter trying to reconcile measured voltage with a stale internal map. Do one full uninterrupted discharge to cutoff followed by a full charge without interruption. The IC locks in a new calibration curve during that cycle and the percentage stabilises.

My 6670 City replacement battery feels warm near the back cover during the first few charges — should I be concerned?

Mild warmth on the first two or three charge cycles is normal with a fresh high-impedance cell. A new Li-ion cell has slightly higher internal resistance than a broken-in one, so the charge IC dissipates a small amount of extra heat as it pushes current in. If the phone is uncomfortable to hold or the warmth persists beyond the third charge cycle, that points to a charge IC fault on the board rather than the battery.
