The battery percentage on my SX-330 jumps around randomly — it reads 60%, then drops to 30% without warning.

This is the fuel gauge IC recalibrating against a new cell it has never seen before. The IC's coulomb counter was trained on the old cell's discharge curve, so it misreads state-of-charge on the replacement. Run one uninterrupted full discharge — let the phone shut itself off — then charge to 100% without removing the charger early. That single cycle gives the IC enough data to anchor its percentage readings to the actual cell curve, and the jumping stops.
