Most likely the cell discharged below the BMS protection threshold, which sits around 2.5V per cell. Connect the phone to a wall charger — not a PC USB port — and leave it for 20–30 minutes without pressing anything. The charge IC on most B2000 Prime units will trickle current into the cell until it clears the lockout threshold, then normal charging resumes.

The battery percentage on my B2000 Prime jumps around erratically — showing 60%, then 45%, then back to 55% within minutes.

This is the fuel gauge IC recalibrating after a cell swap. The IC uses a stored discharge curve from the old cell to estimate state of charge, and the new cell's voltage response doesn't match it yet. Run one complete cycle: discharge the phone to automatic shutoff, then charge to 100% without interruption.
