My iPhone 2G keeps shutting off at around 25% even though the new battery is fully charged — what's happening?

The fuel gauge IC is still using the discharge curve it mapped to the old degraded cell. A fresh lithium-polymer cell drops voltage faster at the low end than a worn cell does, so the IC calls shutdown too early. Run one full discharge to automatic power-off, then charge straight to 100% without interruption. After that single calibration cycle the shutdowns at 25–30% will stop.

The iPhone 2G won't power on at all after the replacement battery sat uninstalled for a few months — is the cell dead?

Lithium-polymer cells self-discharge in storage, and if the cell dropped below approximately 2.5V the BMS entered a lockout state to prevent damage. Connect the phone to a charger and leave it for 20–30 minutes without attempting to power it on — the charge IC will trickle-charge the cell out of deep-discharge lockout before allowing normal charging current. If the Apple logo appears but the phone shuts off immediately, leave it on charge for another full hour before booting.

The battery percentage on my iPhone 2G jumps around erratically — it reads 60%, drops to 40%, then climbs back up without charging. Why?

This is the fuel gauge IC recalibrating against a cell whose discharge curve it has not yet fully mapped.
